Sweet potato and Ragi parantha

 Sweet potato and Ragi Parantha

Ingredients :                    Serves: 2 

Boiled sweet potato : 1

Ragi: 2 tablespoons 

Green chillies chopped

Green coriander chopped

Onion: 1/2finely chopped

Salt and paprika to taste


Recipe :

- mash sweet potato into paste with spoon and chillies, coriander, salt and paprika and mix properly

- add 1/2 cup water and mix again 

- add ragi and make it a paste

- heat non stick pan/ tawa, pour 1/2 batter and spread it like chilla and cook it on both sides with 1/2 tsp oil on each chilla.

- serve hot with curd

Zucchini and corn fritters

 Ingredients:

Zucchini: 1 grated

onions: 1/2 chopped

corns: 1/2 cup boiled

Besan  : 3 Tsp

chopped green chilies and fresh coriander

salt and pepper to taste

Recipe:

Mix all the ingredients nicely.

Take 1 tablespoon of mixture and place it on greased tawa and press a little

Cook it from both sides and serve it hot with dip.

Ragi idlis

Ingredients:

urad dal washed : 1Tsp

rice : 1 Tsp 

ragi flour: 1/2 cup 

poha: 1 Tsp

salt to taste


Recipe:


  • Soak rice, dal and poha separately for 4-5 hour, grind them separately and then mix them.
  • add ragi flour and let the batter ferment overnight.
  • add salt and make steam idlis or chillas out of it.

Quinoa Salad with Mango Twist

Dressing:

lemon juice: 2 Tsp
homey:1tsp
mustard : 1tsp
pepper crushed: 1/2tsp
finely chopped red chillies
salt as per taste

 Salad:

lettuce leaves 
blanched spinach
quinoa 1/2 cup cooked
rajma beans  1/2 cup boiled
cherry tomatoes: 4-5
corn 1/2 cup
mango: 1/2 cup


Mix the dressing in the salad and serve chilled.

Oats Chilla :

Ingredients:

Oats: 2 Tsp
Suji: 1Tsp
curd: 2Tsp
carrot : finely chopped
capsicum: finely chopped
onions: finely chopped
oil: to grease the pan
salt : as per taste
green chillies: 1 finely chopped
corriander Leaves few

Recipe :

1.Mix all the ingredients and make a batter by adding little water

2. make chillas on pan and serve hot.

Fruity Dessert:

Ingrediants:

Berries : (dried or fresh cranberries, blue berries ) 1Tblsp each
Seasonal fruit : 1 cup finely chopped
Chia seeds: soaked for 15 minutes in water 
Coconut milk: 2tsp
Rolled oats: 2tsp roasted

Method:

- Take a bowl / glass, add berries followed by fruits, soaked chia seeds, coconut milk and then top it with roasted rolled oats.
- Refrigerate it and serve chilled.



Oats and veg delight soup

OATS AND VEG DELIGHT SOUP

Ingrediants:

Garlic : 1tsp finely chopped
Mixed veg: 1 cup chopped and boiled (French beans, cauliflower, carrot)
Onions: 1/4 finely chopped
Rolled Oats: 1Tblsp
Oil: 1/2 tsp 
Coriander: 1 Tblsp finely chopped
Freshly ground black pepper
Salt as per taste
 
METHOD:

- Heat the oil in a deep non stick pan, add garlic and onions and saute for a minute.
- Add the mix vegetables, 2 cups water, salt and pepper. Cook on a medium flame for 2 minutes.
- Add the oats and coriander, mix well and cook on a medium flame for another 1 minute.
- Serve Hot
