Falafel with hummus


Ingredients: 

Falafel : 3/4 cup boiled chickpeas (white chana)           

              1Tsp sesame seeds                                                                                                                              2 Tsp chopped coriander and  green chilies                           

              1/2 chopped onion                                                       

             jeera powder 1/4tsp                                                               

             salt and red chilly powder

Hummus : 1/2 cup chickpeas 

                    2tsp sesame seeds

                    2tsp extra virgin olive oil

                   1tsp  lemon juice

                    salt to taste

Recipe:

  • For falafel, mash chickpeas and add all the ingredients together
  • make round balls or flat cutlets out of mixture
  • heat pan/ tawa and cook these balls in 1tsp oil.
  • serve hot with hummus.
  • For Hummus, 
  • blend sesame seeds with olive oil with lemon juice in a mixer till it becomes smooth paste
  • add chickpeas and chickpea boiled water and blend it again till it gets smooth consistency.
  • Serve chilled with hot falafel

South Indian Tomato chutney

 South Indian Tomato Chutney

Ingredients:

Tomatoes: 4 big size chopped in medium size pieces

Onion: 1 chopped

Olive oil: 1tsp

dry red chilies: 2

urad dal : 1tsp

chana dal: 1tsp

Kadi patta: few leaves

dry coconut  powder: 2Tbsp


Recipe:

  • Heat oil in a pan and add urad dal, chana dal, red chilies and slightly sauté them, once dals turn red in color, add onions and saute it.
  • Now add chopped tomatoes, kadi patta and salt to taste.
  • Once tomatoes are mushy. turn off the flame and let the mixture cool down a little
  • Blend the mixture and then add coconut powder and mix it properly.
  • Optional: can add hot 1/2 tsp ghee with  hing and mustard seeds on top

Steel cut oats and dal Dosa

 Steel Cut oats and dal Dosa (tastes same as rice Dosa with the goodness of oats)

Ingredients:                                   

Steel cut oats : 1 cup

idli rice: 1/2 cup

urad dal: 1/2 cup

methidana seeds: 1/4tsp 

Recipe:

  • Wash and Soak all the above ingredients for 3-4 hours.
  • Blend them with 1/2 cup of water in a mixer for good 4-5 minutes.
  • cover the batter and leave it in your kitchen, till it gets fermented, it usually takes 4-5 hours in summers.
  • make idlis / dosa/ uttapam out of it.

Sprouts aape

 Sprouts Aape (ideal snack for diabetic/ weight loss)

Ingredients:

Sprouts raw : 3/4 cup

onions: 1 chopped

green coriander: chopped 

green chilies : 1

Besan / chickpea flour : 1 table spoon/ 15gms for binding

eno: 1/4tsp

salt to taste

Recipe:

  • Blend coarsely sprouts and then add finely chopped all veggies with besan and salt and mix it thoroughly.
  • add eno and make it on appe pan with 1tsp oil .
  • serve hot with amla and coriander chutney.

Bok choy soup

 BOK CHOY Soup


Ingredients:                                                                        Serves: 1

Bok choy : 4-5 stems with greens

Yellow zucchini: 1kt thin and circular slices

spring onions and green s chopped : 1 cup

ginger, garlic : 2tsp  chopped 

light soya sauce : 2tsp

chili oil : 1/3tsp

oil :1tsp


Recipe:

  • Saute zucchini with 1/2tsp oil in a pan or wok till its done and keep it on side.
  • Saute ginger garlic and 3/4 spring onions in a same pan till its done.
  • now add soya sauce, chili oil, salt to taste with 2 cups of water and bring it to boil
  • now add Bok choy (full stems) and cook it for 5 more minutes 
  • garnish it chopped spring onions, previously saute zucchini, lemon juice and chopped cilantro 
  • serve hot

High Protein Sandwich


Ingredients:

Paneer: 100gms

Flax seeds: 2Tsp roasted 

ajwain: 1/2 tsp

salt to taste

for filling:

cucumber sliced

coriander and amla chutney/ hung curd dip

tomatoes sliced

olives

Recipe:

- Blend paneer, flaxseeds, ajwain, salt and very little water togther

- flatten out this mixture on a parchment paper like chapati as thin as possible. bake it for 10-15 minutes 

- now cut this baked bread into 2 halves

- apply green chutney/ hung curd on both sides

- add cucumber, tomato and olives in between with salt and pepper and enjoy.


Tofu, red cabbage, pepper salad


Ingredients:

Tofu: 75gms

garlic: 2 cloves crushed

sesame oil/ olive oil : 1tsp

mixed herbs, seasoning as per taste

Red cabbage (chopped) : 1cup

red, yellow and green bellpeppers : diced 1 cup

apple: 1 chopped

raisins : 8-10


Recipe:

- take oil with crushed garlic, herbs and seasoning in a bowl, mixed it and dip whole 75gms block of Tofu in it and coat it nicely

- Grill coated Tofu in pan till it is properly grilled and red in colour

- now take it out in a salad bowl and slice it in stripes, add all chopped salad veggies 

- add chipotle dressing on top (check recipe of chipotle dressing on our blog)

- Serve it chilled
